Friday November 16

Fairly standard day today. I had some pork crackle around 10. I didn’t eat lunch until after 3. It was chicken and lettuce and was bland and tasteless. However it didn’t bother me. I didn’t eat it all but just a little bit so I wouldn’t be hungry. I worked until after 10 and when I got home Leanne had made keto pizza that was delicious. Like last time I only had two pieces and was full. However I got the grazing bug later and had a third. I hadn’t eaten much all day so I don’t think it will be a problem. Also I managed to get an hours walk in today.

One of the bigger problems I have had with keto is finding a bread recipe that I like. We have tried a couple and they have been alright, but the fact I haven’t used them again suggests they weren’t good enough. While eating the pizza I said to Leanne I think this pizza base could be used to make a type of flat bread. She said you can actually use it to make buns, so I am thinking we might give this a go tomorrow night.

Thursday November 15

I actually had breakfast this morning. I was hungry so I cooked a little bacon and an egg. I felt so full I didn’t eat again until mid-afternoon, when I had a corned meat fritter. I was working late and around half past seven I was hungry so I ate my lunch which was keto quiche and salad.

I got home just after 10 and there was a beef stir fry for dinner. It was quite delicious and I didn’t feel the need to eat anything else before bed time. This has been a really good week for me. I am feeling quietly confident for weigh in day. Of course I can’t get complacent, I am only just over halfway point for the week, so there is plenty of time to slip up. I will be vigilant though so I think I will be good.

I seem to be having less and less to say. My days seem to be getting quite boring. This is a good thing as it means I am feeling less temptations to break the program. I need to get more exercise in and even though I am getting some, my motivation is not there yet to increase it significantly and I am fine with that for now. My mental health is in check for the time being. I never know when that can change and it can happen quite quickly but for now no problems. I am not hungry. I am not craving the foods I use to gorge in only a little over a month ago. It has been a lot easier than I thought it would be. It really is just getting started that is the hardest part. If you are thinking of trying a lifestyle change diet wise promise yourself to stick with it for 2 weeks. If you get through that, I will guarantee  the hardest part is over.

Wednesday November 14

Still not eating breakfast. I should probably stop mentioning that since it is just about everyday. I had some real pork crackle for a snack about 11. Then I didn’t eat again until until about 4. I had a keto friendly quiche that was quite nice. As per normal Taylah had cricket training in Ipswich so we headed down there just after I ate. I had already had a 25 minute walk during the day so i decided not to have one down there. After the sun went down I thought I probably should go for a walk, I was doing nothing else. However remembering the red-bellied black snake from last week made me change my mind. At least in daylight I can see what I am stepping on.

For dinner Leanne had made a dish called Keto Bacon Cheeseburger casserole. Although personally I didn’t think it tasted like a cheeseburger (needed mustard in my opinion) it was absolutely delicious. Personally I thought it was very similar to a lasagna, but maybe even tastier. I have also been good this week as far as grazing goes and I haven’t been any hungrier for it. So this would suggest to me that I was grazing out of boredom rather than hunger.

Tuesday November 13

I only worked in the morning today as I wanted to watch the mighty NY Giants beat the crappy SF 49ers (yes I know the giants are at least as crap as SF, but guess what? The giants won so there). While I was home watching the NFL I thought I would have another go at making corned meat fritters with the leftovers from Sunday night. If you recall last time I forgot to put in the baking powder and also wanted to tweak a few other things. I was fairly happy with the batter although I had to add more almond milk again because it was a little thick. The first batch I cooked was almost a disaster but I figured what I needed to change to improve them and from then on they seemed to be good. Only after dinner will I know for sure.

I had a small snack of pork crackle after getting home at about 11 am, Early in the afternoon I had a sausage leftover from last night with one of the destroyed fritters. It wasn’t bad but I hope the good ones taste better.

I managed to get a 20 minute walk in today as well as a 5 minute slow run. I also decided to do some push-ups but that ended quickly with a sharp pain in my shoulder. I don’t know what caused it and there is no pain except when I try to do a push-up. Maybe it’s just my shoulders telling me they are not prepared to hold up over a 120 kgs.

I am currently sitting through rather a boring awards ceremony for my girls school. It will be late by the time I get home which probably means the fritters will seem better than they actually are because I will be so hungry. On a bright note i was able to say no to the delicious snacks and alcoholic drinks that was provided.

Well it turned out that we had a little family drama when we got home. Heated words were exchanged, some went to bed without eating, and those of us that ate, did so without really tasting what we were eating. Jury is out on the fritters.

Weigh In Day Monday November 11

It’s weigh in day yay!!! Not really, although I am convincing myself it will be good, my eating habits the last week will suggest it’s not possible. And sure enough it was not good but at least a loss I guess, 100 grams. Although I am pretty disappointed at the result, I don’t feel disheartened because I know what I did wrong and I know how to rectify it. It is not as bad when you believe you did everything wrong and you don’t get the results you are looking for.

No breakfast this morning and probably just as well after the weigh in results. I had a small snack of pork crackle around mid-morning. I had a chicken and lettuce with mayo salad for lunch after 3 then went back to work. I ended up having to drive about 40 minutes out of town and was hungry on my way back so I had another small snack of pork crackle. I need to get back on the almonds. I wasn’t having the afternoon snack but if I am going to I should make it almonds.

Dinner was sausages with cauliflower and broccoli in a nice creamy sauce with bacon. It was delicious and I have managed to avoid grazing today. It was a busy day for work but I managed to squeeze in a 10 minute walk.

The Weekend November 10 and 11

Pretty much the usual weekend for me. Up early Saturday for cricket, no breakfast again. Came home around half past 11 and I had a small chicken drumstick. We went shopping then and had an interesting afternoon. Taylah has her school formal in February next year and is going with a friend of hers. They had to meet each other at the shops to buy some supplies for a class party they are having next week. She has also been asked by another boy she went to primary school with to accompany him to his school formal. He also met them at the shops and it amused Leanne and I to watch Taylah shopping with both her formal dates.

While shopping I shared a packet of pork crackle with Leanne and Hayden and thats all I ate until dinner time. Although I did take Taylah through the Macca’s drive through for something to eat and had to sit beside her in the car while she ate it. Taylah had to play and umpire netball so it was quite late by the time we got home and I was starving. Dinner was bacon and eggs with mushrooms, hollandaise sauce on cloud bread. I have heard a lot of good things about cloud bread, in that it is the best alternative bread recipe for keto. To be honest I thought it was crap. It tasted like a bland omelette. Caitlin made it and wasn’t happy with it while making it. I don’t know if she made a mistake or something but baking is something she is very good at. I don’t think I will be looking to try it again.

Sunday morning I was up early again as Taylah had to be in Ipswich for cricket. I had prepared our food the night before. One thing I love is crackers served with cheese, kabana, pickled onions, etc. So I had this idea to do up a platter for our lunch. I cut up some cheese, kabana, salami, pickles, and pickled onions (check what type you use the coloured ones are higher in carbs). For crackers I used pork crackle chips (there are some keto recipes out there for crackers). Leanne had also bought some watermelon the day before and believe it or not, it is one of the fruits you can have on keto albeit limited. I had cut it up last night (which led to me grazing again) and filled a small container full for both of us. I had a small share of the watermelon at about 10am and nibbled on the platter throughout the day.

We got home around quarter to 5 and I pretty much fell fast asleep on the couch. Dinner was corned meat with that delicious keto white sauce. I knew I had probably over eaten all week but I felt like dessert. Caitlin made some keto pancakes with blueberries and cream. They were pretty good but I did feel guilty afterwards as it wasn’t really needed. Also you are meant to limit your fruit content and I had basically had none since starting the program. Now I have had it three times in two days. I grazed through the night again, it is really getting out of control. Well tomorrow will show how bad my behaviour has been.

Friday 9 November

Once again started the day without breakfast. I actually went out to lunch with my good friend Adam. It was Adam and his wife Laurene that convinced Leanne that we should both try keto. They have had amazing success with it. I planned not to eat anything before lunch but I ended up having a snack before we went to lunch. Proper pork crackle and only a small amount. Not the pork crackle chips that started off as a good snack for me but lately are becoming my downfall.

I was worried about lunch because I knew there would be foods I would want to eat on the menu, but foods I shouldn’t eat. Going with Adam I at least knew I would have support. In fact I was very proud of myself. I ordered a drover’s steak, which was a rump steak topped with cherry tomatoes, onions and cheese. The waitress asked if I would like salad and chips with it. I said just salad thank you. She then asked if I would like double salad. I said no thank you. Success, this is the first time I have eaten out since starting keto. I ordered a no sugar coke to drink and Adam and I had a very enjoyable lunch.

After lunch we planned to go to the driving range and hit a few balls. However it was closed for maintenance so we played around of mini golf instead. All in all I was satisfied with a time together. We normally would involve food and alcohol around our get togethers. It was good to do something without unhealthy behaviour being involved. Like I said it helps that Adam is on the program as well.

I think I am still grazing to much. Whether it is the pork crackle chips which I am finding hard to avoid (although I did today), or salami and cheese, or anything I can find in the fridge that meets the keto requirements. I feel I am going to pay for this come weigh in day.

Dinner was keto swiss meatballs, delicious! This is close to my favourite keto meal we have had. We have only had it twice which makes it even better.
