Woke up this morning not feeling very well. I felt dizzy, a little nauseous and I could shit through the eye of a needle at 40 paces (excuse the vulgarity, it was one of my late Grandmother’s favourite phrases). As far as being sick goes this type is one I would prefer just at the moment. This probably sounds a little weird but I do have a logical explanation. See when I have got sick in the past, I have used this as an excuse to eat whatever I liked. Comfort food as such, as it made me feel better. However feeling like this, I don’t feel like eating at all, so that is why I prefer it to be this type of illness.
By midday I was feeling much better. I had a small amount of pork crackle for a snack. I worked until about 7 O’clock and then came home for dinner. Leanne had made those delicious buns again and we had steakette and egg burgers with hollandaise sauce. It was absolutely delicious and because I had not eaten much all day one wasn’t enough, so I had a second. I felt guilty after this because i felt over full although satisfied.
So first thing this morning I took a photo of myself to try and compare to the photo I took of myself at the start of the journey. Really I don’t think I could see much difference. All this really means to me is that when you are extremely obese an a 11 kilo weight loss makes stuff all difference. Having said that I have noticed a difference in my clothes so at least I have that. Anyway I will put both photos up and you can make your own decision on if the difference is noticeable.

The rest of the day followed the same pattern as most other days. No breakfast, a pork crackle snack mid to late morning and lunch around 3 o’clock of keto quiche and salad.
Dinner time was a different story as I was home which has been unusual on Thursdays of late. I attempted to make a keto flatbread to serve with some lamb, garlic and herb sausages. I successfully made the recipe but like a lot of keto breads we have tried it tasted like eggs. It is not a big deal the bread roll recipe Leanne has been using is a big hit, but I would like to find a decent flat bread recipe. All in all the meal was delicious though. The only major drama was the grazing I was doing while making dinner, which might come back to bite me. Not to mention the keto meringue snacks Taylah made which I also ate to many of.
Had a sleep in this morning which was well needed. When I woke up I cooked some sausages for breakfast then went to work. It was a fairly basic day otherwise. I ate my lunch of chicken and salad about 3 O’clock and then didn’t eat anything again until I got home from work at about 10.
Caitlin had decided to make bacon cheeseburgers using the bread roll recipe Leanne used last weekend served with keto onion rings. Burgers were a hit, onion rings didn’t really work the way the recipe said they would. They were still onions though, which I love, so I ate them. Taylah had pizza for dinner at work so she didn’t want her burger, so I claimed it and wrapped it in foil to have for breakfast.
I was up to the early hours of the morning because I just couldn’t sleep. I ate half a pack of pork crackle at some stage. I went to bed at 4 am and was up at 7 very tired.
Fairly standard day today. I had some pork crackle around 10. I didn’t eat lunch until after 3. It was chicken and lettuce and was bland and tasteless. However it didn’t bother me. I didn’t eat it all but just a little bit so I wouldn’t be hungry. I worked until after 10 and when I got home Leanne had made keto pizza that was delicious. Like last time I only had two pieces and was full. However I got the grazing bug later and had a third. I hadn’t eaten much all day so I don’t think it will be a problem. Also I managed to get an hours walk in today.
One of the bigger problems I have had with keto is finding a bread recipe that I like. We have tried a couple and they have been alright, but the fact I haven’t used them again suggests they weren’t good enough. While eating the pizza I said to Leanne I think this pizza base could be used to make a type of flat bread. She said you can actually use it to make buns, so I am thinking we might give this a go tomorrow night.
I am still feeling a little down after my weigh in yesterday. In fact if I am honest it is more than a little down but I am not sure I can lay all the blame at the feet of my weigh in results. A couple of years ago I was diagnosed with severe depression. Although there is several reasons as to why I was depressed one of them was my actual weight gain. Not only was it a problem it was also a catch 22 situation. You see the more depressed I got the more I ate. I tried to find any enjoyment from life by eating the types of foods I liked in abundance. It would work. The whole time I was eating these lovely tasting unhealthy foods I was in heaven, my troubles forgotten for the moment and not a care in the world. That is until I took that last bite. Then I would be worse than before I started. I would hate myself for being weak. I would admonish myself for believing that food held the secret to happiness. It doesn’t but that didn’t stop me from doing the same thing the next day. Of course the longer term result of this behaviour was to put on more weight, which would increase my level of depression which I would try to fix with another bout of bad eating. So I know through this journey there are going to be highs and lows. That is just natural. What I will have to be careful about is that the lows don’t send me into a downward spiral that undoes all of the good work I am doing and then some. I don’t really know how I will do this, but that it is important that I am constantly vigilant in being aware of it.
Another symptom of my depression can be either sleeping to much or not enough (I know, how can it be both). I didn’t sleep well last night and I found myself sleeping on the couch on and off all day today. So I can see a pattern in my behaviour that could lead to trouble. However so far I am still being strong with my eating. In fact I would say its not even about being strong, I just don’t feel like eating for enjoyment at the moment. Last week a fast food ad on tv would drive me crazy wanting to eat something bad. This week though it isn’t bothering me. I think it has taken 2 weeks to convince my body that it doesn’t want that shit and that what it is being supplied is more than enough nutrition.
In fact the last two days I haven’t eaten very much at all. I think this had an affect on my appetite as by dinner time I was quite famished and feeling like something substantial. I was the only one home so I had to make dinner and I decided to make something keto friendly that we haven’t done yet. I decided to make steak and salad wraps using a keto friendly naan bread recipe. I dry rubbed the steak with a smokey flavoured spice mix and sliced it thinly after cooking. I made a simple salad dressed with what I call my big mac sauce (I simply mix mustard pickles with mayo until I get the right flavour). I served it with the naan bread and the meal was loved by all.
I am normally a very busy person on the weekend. I have three high school aged children who either have jobs, play sport or both. Saturday mornings at this time of the year I normally spend coaching my junior cricket side. This Saturday was suppose to be the first game of the year but it is still raining so I would be home and bored, which in the past has led to me eating for enjoyment rather than nutrition.
Scrambled eggs for breakfast again but it did the job of filling me up before I went shopping with the family. We had a few things to shop for but mainly we were out to buy items we need to make sure our meals suit the keto eating plan. Some of the things we have and will be using are almond flour and milk, coconut flour, stevia sweetener and psyllium husk powder (although we forgot this while at the grocery store). I think it was probably an unusual sight at the grocery store as all five of us walked up and down the aisles checking the carb content of different foods. We would call out to each other this is no good or hey this has no carbs and we would get strange looks.
One thing that came to our attention was when searching the internet for foods suitable for keto is that just because a certain item came up in the search didn’t mean it was actually suitable. A lot of items come up because they are low carbs but still have to many carbs to suit keto. One thing we were looking for was bread and an internet search comes up with an option but checking the label at the store it was still to high for keto. So my recommendation is if you want to give keto a go make sure you check the label and don’t just buy something because someone says it is suitable.
After shopping we had to go to my son’s footy presentation. While there the smell of hamburgers being cooked wafted through the hall making my stomach grumble in anticipation of chowing down on one. I remained strong and went home for lunch. However now I didn’t feel like a salad served with cold meats, I wanted grilled meat. So we grilled some sausages and that was our lunch. It did the job and those cravings went away.
While shopping we bought 2 small packets of pork crackle and that was our afternoon snack replacing the large packet of potato chips that was more usual. I ate slow savouring every bite and washed it down with sugar free soft drink. This was quite satisfying and I then enjoyed an afternoon nap in front of the tv.
For dinner I decided to find a recipe to make flatbread. I wanted to make kofta and serve it with a salad on the flatbread like a home made kebab. All the best bread recipes for keto seem to have the psyllium husk powder that we had forgot to purchase earlier. However I settled on one that didn’t. It used a mixture of almond and coconut flour and although the dough (it was more like a batter) was easy and quick to make, they did take a while to cook. They came out more like fluffy pancakes however served with the kofta, salad and a dressing they were quite delicious. In my opinion they could easily have been used as pancakes for a dessert if one so wished.
On Sundays my 16 year old daughter plays women’s grade Cricket for Ipswich which is about an hour and a quarter away from where we live. Actually I should probably share with you that we live in a small city Called Toowoomba in the state of Queensland in Australia. Anyway I have to get up early so the two of us can get there for the match. This Sunday I was in the shower trying to wake up when my wife tells me that word had come through that the ground is to wet and the match has been called off. Instead of going back to bed I thought I would experiment for breakfast with an idea I seen while looking for the flatbread recipe the evening before.

Have you ever tried a cake in a mug? Oh my they are to die for. Well I found a recipe for a keto bread that worked just like a cake in a mug recipe and takes only 90 seconds to cook in the microwave. So when finished the bread looks a lot like english muffins so my idea was to make bacon and egg muffins for breakfast. Unfortunately it didn’t turn out the way the recipe said. I believe this was my fault the recipe said to let the bread slide out of the mug, however I only realised that after tapping the mug to make it come out, which it did in chunks that looked a lot like scrambled eggs. Only my son and I were awake so we ate the mush which was quite tasty and that was my breakfast for the day.
Lunch was bacon, egg, garlic butter mushrooms and some leftover kofta. It was quite enjoyable.
Now if you have been reading this blog from the start you may think I am a lazy bastard as all my meals are being made for me by my lovely wife. This has been the case this week as Leanne was the one to do all the research on what we could eat as it was her idea that we try keto. So last Sunday while I was away with my daughter for cricket she did a lot of the weeks prep. This time I was home and was quite willing to help. We spent quite a bit of time in the kitchen. We roasted two chickens which were pulled apart to use for our lunches. We roasted some pork skin to make pork crackle for our weekly snacks. All the while we were preparing our Sunday night dinner of corned meat with veggies and white sauce.
I realised this would be another of those tests I am always talking about some time in the future. I can easily see us getting tired of doing this prep or even being to busy to get it done. All I can say is if you decide to go keto, it is a little more preparation than you might be use to but if you are committed then hopefully the pros will well outweigh the cons by a long way.
Leanne found online a keto friendly white sauce for the corned meat and I have to say I think it tasted better than the standard white sauce. I only had a small dinner though, as I had been grazing on the chicken we cooked earlier while pulling them apart.
Sunday night is usually our once a week dessert night. I decided I wanted to do pancakes with a blueberry coulis and cream. However I spent that much time looking for a recipe I liked that I was no longer hungry and we decided to forgo the dessert. Maybe this keto thing is really starting to work on keeping my hunger sated.
